Morrison displays healthier hospital food

At the Partnership for a Healthier America summit in Washington today, R.J. Harvey, the executive chef of Morrison Health Care Food Services, served a Colusari Red Rice salad with mango, chilies, almonds and snow peas. Harvey said the salad’s dressing using carrot juice and low-sodium soy sauce is much healthier than the usual red rice dressing using vinegar and other oils. Morrison, which provides food to 450 acute-care facilities in 40 states, is providing healthier food to hospital patients and the cafeterias where hospital visitors eat, Harvey said.
